They are now seeking to recruit a Dining Facility Supervisor who will report to the Food Services Manager and be responsible for the day to day operation of the Dining Facility.
Therefore your basic function will be to supervise the day to day operations of the Dining Facility at either of their locations and the provisioning of Remote Sites throughout the Area of Operations. Monitors the performance of the Dining Hall Foremen and locally employed personnel to maintain high standards of work and health. Creates and maintains a roster for shift working of the Dining Hall Foremen to include the Deputy Food Services Manager as when leave and other absences require. Works closely with the Food Services Manager to ensure compliance with US Tri-Service Food Code (USTFC) standards.
Therefore your responsibilities will include:
• Supervises, coordinates and evaluates work of Dining Floor Foremen in preparing and serving food, and cleaning facilities and utensils in assigned Dining Facility.
• Orders food stuffs held within the Dining Facilities to minimise on hand stocks and maintain visibility of inventory while ensuring compliance with mandated health requirements. Supervises the issue of food stuffs during each shift, ensures that is stored correctly and used correctly and for the purpose for which it was procured.
• Ensures that the food store room staff operates a first in/first out inventory system so that the oldest food items are issued first. Exceptions shall be made only when the condition of a food item dictates earlier rotation. Expired items shall be advised to Food Services Manager and Force Inventory Manager.
• Oversees the training programme for locally employed personnel and ensures that accurate training records are maintained and forwarded on a quarterly basis to the FCA.
• Works with the Dining Facility Supervisors (DFS) and Force Food Services Technician in the development of the 4 week menu cycle, which should be reviewed every 90 days, to include the estimation of food preparation amounts and advise on the possible adjustment of recipes for the purpose of meeting projected meal requirements and minimizing waste.
• Works with the Deputy Food Services Manager to immediately remedy any deficiencies identified during the Force Vet and Preventative Medicine routine and special inspections. Works with the Deputy Food Services Manager to make changes to the OJT programme to prevent any future deficiencies.
• Ensures that equipment is maintained properly and remains functional and fit for purpose. Conducts a weekly Work Order review with the Force Engineering Office to promote prompt and timely equipment maintenance and repair. Reports faulty equipment to the Force Engineering Office for repair.
• Informs the Food Services Manager of any incidents of outstanding performance and initiative by staff during the assigned shift.
• Coordinates with the Food Services Manager regarding the running and function of the Club Systems to promote usage and contributions to the annual budget.
• Will be required to work irregular hours/shifts as necessary to meet work requirements. May be required to perform in other duties when the operational THREATCOM LEVEL changes. Performs emergency and stand-by duties as required.
• Ensures that an ‘accident book’ is maintained for the relevant dining facility and, by weekly signature, that the book records all injuries requiring any medical attention.
• Performs any other duties required by Food Services Manager.
To be eligible for this role you will need the following minimum qualifications and experience:
• Graduate of a recognized Hotel & Catering Institute or equivalent military training. Minimum of ten years' experience in institutional catering with at least five years’ experience in a supervisory capacity.
• Must have a broad range of culinary skills as well as experience in training of personnel in food service hygiene and sanitation.
• Experience within a military dining facility and/or multinational environment an advantage. International experience desirable.
• Computer literacy and ability to use Microsoft Office is essential. Knowledge of SAP or another ERP system is preferable
LANGUAGES:
A good command of both written and spoken English is essential. Arabic is desirable.
This role would probably suit a SNCO who has been responsible for running a dining function overseas and is experienced in work with other nationalities.
